Chocolate Cake

Ingredients:

  • 250g butter
  • 250g Whittaker’s 72% Dark Ghana chocolate
  • 185ml water
  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 3 heaped Tbsp cocoa powder
  • 2 cups caster sugar
  • 4 eggs
  • 125ml butter milk (or just milk and 1 tbsp vinegar to sub)
  • 2 tbsp oil

Method:

  1. Preheat oven to 160 degrees C
  2. Brush deep tin with oil/butter and line to an inch above tin. 20 cm tin
  3. Put butter and choc in pot with 185ml water and stir on low heat till smooth
  4. Sift flours, cocoa, BP together. Stir in sugar.
  5. Add combined eggs, oil, buttermilk
  6. Use big metal spoon to stir gradually
  7. Then add chocolate mix
  8. Pour into tin
  9. Bake about one and 3/4 hour. Skewer – it should be slightly wet – not too wet
  10. Leave till cold then turn out
