Ingredients:
- 250g butter
- 250g Whittaker’s 72% Dark Ghana chocolate
- 185ml water
- 2 cups flour
- 1 1/2 tsp baking powder
- 3 heaped Tbsp cocoa powder
- 2 cups caster sugar
- 4 eggs
- 125ml butter milk (or just milk and 1 tbsp vinegar to sub)
- 2 tbsp oil
Method:
- Preheat oven to 160 degrees C
- Brush deep tin with oil/butter and line to an inch above tin. 20 cm tin
- Put butter and choc in pot with 185ml water and stir on low heat till smooth
- Sift flours, cocoa, BP together. Stir in sugar.
- Add combined eggs, oil, buttermilk
- Use big metal spoon to stir gradually
- Then add chocolate mix
- Pour into tin
- Bake about one and 3/4 hour. Skewer – it should be slightly wet – not too wet
- Leave till cold then turn out
