Wholemeal Bagels

Ingredients

  • 1 ½ Tablespoons Breadmaker yeast
  • 8 cups wholegrain flour
  • 4 teaspoons salt
  • 4 Tablespoons sugar
  • 3 cups warm water

Instructions

  1. Put everything in your mixer and mix with the dough hook
  2. Add a little extra water if necessary.
  3. Mix on a low/medium speed for 5 minutes or knead by hand
  4. Spritz dough with nonstick spray, turn over and spritz again. Cover bowl with a clean tea towel and let rest at room temperature for 1 ½ – 2 hours, until dough has doubled in size.
  5. After rising, grab a handful of dough and roll into a ball.
  6. Let the dough rest for a minute or two, then punch a hole into the middle of the balls with the end of your wooden spoon or finger. Thread the bagel onto the spoon handle, grab the spoon and give it a little twirl to make a nice bagel hole
  7. Cover with clean tea towel and let rise for 15 – 20 minutes.
  8. Fill a wide pot with water, at least 5cm deep, and bring to boil. Boil bagels for 90 seconds on each side
  9. When bagels are done boiling and while still wet, press tops lightly into desired toppings
  10. When all bagels have been boiled, bake on a lined oven tray for 8 – 10 minutes, flip and bake for another 8 – 10 minutes.
